These are our first few cucumbers to be picked off the trellis. The weather had been rather warm even though its suppose to be the beginning of autumn. The warm weather and sunshine makes great cucumbers! I don’t quite fancy stir frying cucumbers and generally prefers serving them up fresh, chilled and crunchy. So here’s a simple 5-minute cucumber dish that you can serve up.
Instructions
- Cut 2 medium sized cucumbers into cubes
- Drizzle over some shallot oil and sprinkle sea salt
- Add shredded bak-kwa (pork jerky)/pork floss and/or japanese furikake
- Add coriander as garnish
